Brousse du Rove is a fresh goat's milk cheese from Le Rove in France. Makers use whole milk from Rove goats, a hardy local breed with long twisted horns. They heat the milk and add a little vinegar so the proteins clump into soft white flakes. Those flakes are lifted into small cups and left to drain. The cheese has no rind, and the traditional paste is not salted.
