Chavroux is a brand of fresh goat's cheese from the Cognac area of France. The milk is pasteurized, and the paste is white, mild, and soft enough to spread. The best known piece is a small pyramid with a flat top, and a short log is sold as well. The fresh pyramid has no dry rind. Cooks use it on bread, in salads, and in warm dishes when they want goat's milk without a sharp farmyard taste.
