Coulommiers is a soft ripened cheese from France. It is made from cow's milk and finished with a white bloomy rind. The wheel is smaller and thicker than a large Brie, so it ripens through the center more readily. The paste is pale and creamy when ripe. It belongs to the same broad family as Brie and Camembert, but it keeps its own name and size.
