Waterloo is a semi-soft cheese from the United Kingdom, made with cow's milk from Guernsey cattle. The milk is naturally golden, so the paste is yellow rather than pale. A thin bloomy rind covers each wheel, and the cheese is milder than a ripe Brie. Makers use a washed-curd method, which means some whey is replaced with water so the acid stays lower. The center keeps a little flake, while the edge turns creamy as it ripens.
