Maroilles is a cow's milk cheese from Nord-Pas-de-Calais in northern France, and makers also produce it in Picardy. It is sold as a square or rectangular block with a moist orange-red rind. That rind is washed while the cheese ages, which builds a strong smell well before the first taste. The paste is soft, pale, and savory, with a supple body that slices when fairly young and slumps a little when ripe. In the north it is both a board cheese and a cooking cheese.
