Alpkäse is a semi-hard cow's milk cheese from South Tyrol in Italy. The name means cheese of the alpine pasture, and the wheels come from mountain dairies in that region. They are large and round, with an elastic paste and a natural rind that may darken as it rests. Color inside runs from ivory to straw yellow, and a few small eyes are scattered through the body. It is a table cheese, not a fresh soft cheese and not a very dry grating block.

Berner Alpkäse is a hard cow's milk cheese from the Bernese Alps in Switzerland. Herders make it on high pastures while the cows eat summer grass and alpine herbs. The milk is raw, and the wheels have no eyes, unlike many other Swiss cheeses. A younger wheel is firm and full. The very dry form, called Berner Hobelkäse, is shaved into thin curls because a knife will not cut it cleanly.
