The milk is goat's milk, and the curd is set in a way that stays gentle rather than sharply sour. Under the leaves, the paste is creamy and can turn almost runny when ripe. The leaves add a woody, slightly tannic note that plain fresh goat cheese does not have.

Picodon is a small goat's milk cheese from the Rhône-Alpes region of France. Each piece is a low round disk of whole goat's milk, and the paste is soft when the cheese is young. The taste is frank, with hazelnut, a light mushroom note, and sometimes a peppery edge. A short ripening leaves the center supple under a thin rind. A longer rest dries the paste and makes the taste stronger, and a washed style goes further still.
