Chhurpi is a traditional cheese from Nepal, and the same name covers a soft fresh curd and a very hard dried piece. People in Nepal eat both forms, and the cheese is also known in neighboring highland areas. The soft kind is white and mild, and it goes into everyday dishes. The hard kind is dried until it is extremely firm, and it keeps for a long time. Visitors usually recognize the hard piece first.

Chura loenpa is a soft Tibetan cheese curd eaten in China. It is the moist form of chura, closer to fresh curds than to a wheel with a rind. The curds are mild, loose, and a little tangy, and they are meant to be eaten soon. A harder dried cheese from the same curd tradition is a different food. Chura loenpa stays soft, and that softness is the point of the name.
