Handkäse is a small sour-milk cheese from Germany. The name means hand cheese, because makers shaped the little rounds or bars by hand. It starts from sour skim-milk curd, so the paste is lean, tangy, and free of a rich cream taste. A young piece is mild and fairly firm. Nieheimer is a sour-milk cheese from Germany, made with cow's milk and no rennet. The small rounds are fully ripened, so the paste is even rather than a white core inside a riper coat. A smooth surface runs from yellow to gray-green, and some pieces are sold with hop leaves on the outside. Caraway is a usual seasoning. The cheese can be firm enough to slice, or dry enough to grate.
