Livarot is a soft cow's milk cheese from Normandy, in France, with a washed rind and a strong savory aroma. The round is pale cream inside and orange to pink on the outside, where regular washing encourages the rind. Thin bands, traditionally of sedge or a similar strip, circle the side and help the cheese hold its shape. The paste is supple and can turn creamy as it ripens. It belongs with the pungent washed cheeses, not with mild bloomy rounds.

Maroilles is a cow's milk cheese from Nord-Pas-de-Calais in northern France, and makers also produce it in Picardy. It is sold as a square or rectangular block with a moist orange-red rind. That rind is washed while the cheese ages, which builds a strong smell well before the first taste. The paste is soft, pale, and savory, with a supple body that slices when fairly young and slumps a little when ripe. In the north it is both a board cheese and a cooking cheese.
