Nøkkelost is a semi-hard cow's milk cheese from Norway, sold in blocks and in wheels. The name means key cheese, and the same cheese is also called kuminost. Cumin and cloves are mixed through the curd, so dark flecks show in a pale yellow paste. Small round eyes are a normal part of the cut face. It is an everyday spiced cheese, closer to a Dutch loaf than to a sweet brown whey cheese.

Pultost is a soft sour-milk cheese from Norway, made from cow's milk and flavored with caraway seeds. Skimmed milk is soured, warmed until the curds separate, drained, salted, and mixed with the seeds. The cheese is lean and pungent, with no rind and a sharp lactic taste. Norwegians spread it on bread or flatbread, or set it beside boiled potatoes. It is an old everyday cheese, not a mild slicing cheese for a quiet board.
