Substitutes for Sirene

A substitute changes the dish. The note says how.

• FetaFeta is the brined white cheese most shops offer when a salad needs sirene and the Bulgarian block is missing.
• Beyaz peynirBeyaz peynir is a salty white cheese kept in brine, and it crumbles into the same kinds of salads and savory pies.
