Substitutes for Buxton Blue

• Shropshire BlueIt has the same orange paste and blue veins, so it can replace Buxton Blue on a plate or in a salad.
• StiltonIt is the widely sold British blue, and it covers the same board and crumble uses when the russet cheese is missing.
