What can be frozen
A firm or hard cheese freezes better than a fresh or soft one. Grate it first, or cut it into the amount you will use in one dish. A bloomy round or a fresh cheese turns wet and grainy after it thaws.
How to pack it
Wrap the cheese so air does not reach the cut face. A closed bag keeps it from taking on freezer smells. Use it within a few months. Thaw it in the refrigerator, not on the counter.
Cook with it
Thawed cheese loses the texture you want on a board. Stir it into a sauce, a bake, or a grilled sandwich. Do not refreeze a piece you have already thawed.
