How to store cheese
Wrap the cut face, keep styles apart, and do not leave soft cheese to dry out.
Wrap the cut face
Cheese dries from the cut face, not from the rind. Wrap that face. A fresh cheese belongs in a closed container. A firm cheese can sit in wax paper or cheese paper inside a box, so it can breathe a little without picking up every smell in the refrigerator.
Do not mix the rinds
Blue mold and washed-rind bacteria spread. Store those cheeses away from a bloomy round and away from an uncovered block. If a hard cheese grows a little surface mold, trim it. If a fresh cheese grows mold, throw it out.
How long it keeps
A fresh cheese is a short-life food. Eat it within a few days of opening. A firm or hard cheese lasts longer if the face stays covered. Bring out only what you will eat, and put the rest back cold.
